Chorizo and Potato Stir Fry

Ingredients

350g new potatoes, sliced
225g Chorizo sausage, de-skinned and sliced
1 red pepper, deseeded and diced
½ bunch spring onions, sliced
2 tomatoes, diced

Description

The spicy flavour of the Chirizo enhances the flavours of the other vegetables.

Method

Place potatoes in a saucepan and cover with cold water.
Bring to the boil and simmer for 5-6 minutes until tender. Drain.
Put chorizo and pepper into a frying pan and stir fry for 2-3 minutes.
Add spring onions, tomatoes and potatoes and cook for 2-3 minutes.
Serve.
