Fudge Cake Desserts

Ingredients

175g melted butter
1 cup firmly packed soft brown sugar
1 egg (beaten lightly)
1 teaspoon vanilla essence
3/4 cup plain flour
1 teaspoon baking powder
5 large heaped Tablespoons of cocoa
Half a cup dessiccated coconut

Method

Combine butter, sugar, egg and vanilla in a bowl.
Stir in sifted plain flour, baking powder and cocoa, then add coconut.
Mix well, but don't over combine.
Line a muffin tray with patty cake papers.
Place mixture evenly into the paper rounds.
Bake at 180 degrees fan bake for approximately 10 minutes (the time totally depends on your oven. You will need to keep an eye on them and take them out when the middles no longer look soft and they are bouncing back.)

Serve warm from the oven with whipped cream or icecream, or slightly cooled and drizzled with warm melted milk chocolate.

Tip: Make in a mini muffin tin for the kids lunchboxes. This recipe would make 24 mini choc fudge cakes. Ice or dust with icing sugar.
