Mild Curry Paste

Ingredients

5cm piece fresh ginger
2 cloves garlic, peeled
2 green chillies, deseeded
1 small onion, roughly chopped
1 tablespoon sesame oil
2 tablespoons coriander seeds
juice of 1 lime or 1/2 lemon
1/4 teaspoon turmeric
1 teaspoon fish sauce

Description

This is a great curry paste that can be used in most Thai curry recipes that call for yellow or green curry paste.

Method

Place all of the ingredients in a mortar and pestle or food processor and grind or process to make a smooth paste.

Store in an airtight container in the fridge for up to 3 weeks and use as required.
